February 10: An Eggcelent Day

Ok, so that's a really cheesy blog title but that's what you get with a bit of fatigue.  This single parenting thing is tiring but thank you to all who are praying because we're really doing well so far even though I'm tired.  Thanks too for praying for George.  After traveling 20 hours yesterday, he landed safely in Calgary at midnight and is now with his family in Coaldale (close to Lethbridge, Alberta).
So, why the cheesy title?  We started our Sunday morning as we do most weeks: crepes for breakfast (along with eggs).  After church we were invited to eat lunch with our friend Laura's family along with Mauricio, one of the guys who used to be at Casa de Amor.  She served us delicious veggie omeletes.  Then tonight at Casa de Amor, we had barbudos for the first time:  an interesting combination of cooked green beans and eggs.  So, three meals of eggs and an overall good day meant it was an eggcelent day!
Our time at Casa de Amor always starts out with games with the guys.  Today it was Uno and Dominos.

We were stuffed by the end of the meal:  The barbudos were served with rice, black beans, salad, plantains (ripe/sweet ones) and I made peanut butter pie for dessert.

If you want a really simple typical salad try what they served us tonight at Casa de Amor:  chopped up tomato with shredded carrot, chopped cilantro, fresh lime juice and salt, and serve it over lettuce....light and delicious!
